Pasilla

These chillies are thin and 5 to 7 inches long. They are dark green when fresh and dark brown to black when dried.
They are mainly used dried or powdered and have a licorice type flavor.

Pequin

Also known as birdseye chillies. These chillies are normally obtained dried and are very hot. They are used in liquid pepper seasoning, thai dishes and relishes.
When green they can be pickled and when red are dried.

Serrano

Serranos are bright green when young, turning red, brown, orange or yellow when ripe. They are 1 to 2 inches long and are quite hot.
The most common use for these chillies are in salsas or pureed to use in sauces.

Tabasco

Named after the region they are grown in Mexico. These small chillies are quite hot. When young they are green in colour, turning yellow and the to red as they ripen.
Tabasco chillies have become famous because of the liquid sauce made from them, by the same name.

Thai

Thai chillies can be found green or red and are very small, No more the 2.5 inches long. They have lots of seed and are fairly hot.
They are commonly used in south east Asian cooking, Thai curry pastes and Thai salads.
