Cayenne

Bright red chilli, usually 2 to 3 inches long.
Cayenne chillies are very hot when fresh, However they are normally sold dried and ground as a powder.
They are used in curries and Cajun dishes

These chillies are named for their similarity to the fruit.
They are slightly weet to taste and commonly found in Hungary and other parts of Eastern Europe. They are available to buy pickled and are good in salads and salas.

Small, thin, red and quite hot.
These chillies are similar to Cayenne chillies. Their name comes from the plants resemblance to a small tree.

Chipotle

This chilli is a dried, smoked version of a red jalapenos.
It has a nutty flavour and is light brown in colour. They are available canned in tomato based sauces or pickled. They are good in soups and stews, with a moderate heat.

These chillies are small and bright green. They look similar to jalapenos, but are milder in flavor.
